Melissa Claire's Kitchen

Once you contact me, I will send you a questionnaire covering your food likes and dislikes, as well as your delivery and payment preferences.  Then, each Monday of the week prior to your delivery date, you will receive a menu via email.  You then select your meals from a variety of dishes.  Most dishes can be tailored to your tastes and preferences.  Freshly prepared, the meals will be delivered to you in an insulated cooler bag with ice packs (which keep your meals cold for four plus hours) on your specified delivery day, between 2pm and 5pm.  They can be left on your door step or conveniently stored for you in your refrigerator.

General information

Packaging
I have tried to ensure that the packaging of your meals is as environmentally friendly as possible without compromising the quality, life span and ease of reheating your meals.

  • Pressed paper board containers:  These can go in the refrigerator, freezer, microwave and oven (up to 375°).  These containers are compostable, but the plastic film is not.  The film is sealed onto the paperboard container, ensuring an air tight seal and giving the meals a longer life span with higher quality.
  • Plastic containers: Containing sauces & garnishes must be removed before heating & can be recycled.
  • Bio-packs: The paper containers your salads come in should be disposed of in the green compost bin. The plastic wrap surrounding the bio-packs can not be recycled & should be places in the garbage.
  • Cooler bags and ice packs:  These are reusable and should be returned on your next delivery date.

Heating pointers
Heating instructions are on the menu that comes with your order, but if you have misplaced your menu, the following guidelines should be useful:

For items packed in cream colored pressed paper containers with a plastic film, simply peel a corner of, or poke holes in, the plastic film and place the disposable container on a baking sheet in the middle of an oven preheated to 325°.  Do not exceed temperatures of 350°.  All items in clear plastic containers must be removed and placed in an oven-proof container before heating.

Many dishes come with a container of sauce or a garnish of fresh herbs; these containers should be removed prior to heating.

Entrées take approximately 20-25 minutes to reheat.
Soup is best reheated in a saucepan on the stovetop.

Microwaves
I don’t provide specific microwaving instructions as microwaves differ so greatly in their heating strength.  Therefore, I recommend that you start by heating the dish for about a minute, and then add time incrementally to avoid overcooking and/or drying out the food.

Freshness and storage
I pride myself on preparing your food with the best and freshest ingredients available.  You should put your food in your refrigerator as soon as possible and keep it there until use.  Properly refrigerated, your food will keep for three plus days.

I recommend that you eat any seafood dish within the first or second day.

Many items are freezable. Please contact me for information on which dishes freeze the best. For the best results and highest quality, freeze items as soon as possible and make sure you defrost items completely before reheating.
